In a large bowl, add and combine well:
1/4 cup brown sugar
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
As there is no flour to incorporate, add and combine well into the same bowl:
2 eggs
1/4 cup corn oil
1 cup sour cream
1 cup creamed corn
Spoon into prepared pan. Bake at 200 C (400 F) for 20 minutes. Remove from pan and cool on rack. Makes 10 medium-sized muffins.
These muffins go very well with cream of tomato soup, with peameal bacon or sausages for breakfast, or with ham or chicken for dinner.
