Some studies show caffeine to increase the energy derived from fats during exercise, thus pushing back the point of running out of carbohydrate energy and the bonk.
In a large bowl, add and combine well:
2 tsp instant coffee dissolved in 1 tbsp hot water
1 egg 1/4 cup oil
1 cup milk
1 tsp orange or vanilla extract
In a smaller bowl, combine well:
1 1/2 cup all-purpose flour, unsifted
1/2 cup sugar
2 tbsp pure cocoa
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt 1/2 cup chopped or sliced almonds
Combine wet and dry mixtures and fold together gently until just mixed. Spoon into prepared pan and decorate the top of each muffin with a chopped or sliced almonds. Bake at 200 C (400 F) for 25 minutes. Remove from pan and cool on rack. Makes 10 medium-sized muffins.
For an even richer chocolate flavour, use 2 tbsp of semi-sweet liquid baking chocolate (available in a tube) and increase flour to 1 3/4 cups.
These also go well with coffee. Try forming 20 miniature muffins from the batter.
