These muffins are great for protien and substance on long rides or tours. To reduce fat, try replacing the eggs with a banana. A good approach would be to mix these muffins in with snacks which lack protiens and fats to supplement isolated carbohydrates, such as well into a long day of riding.

In a large bowl, add and combine well:

2 eggs
1/2 cup honey
1/4 cup oil
2/3 cup milk
1 tsp vanilla, or 1/2 tsp almond extract

In a smaller bowl, combine well:

1 cup cake and pastry flour, unsifted
1 cup ground sesame seeds
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2/3 cup raw sesame seeds

Combine wet and dry mixtures and fold together gently until just mixed. Spoon into prepared pan. Bake at 200 C (400 F) for 20 to 25 minutes. Remove from pan and cool on rack. Makes 12 medium-sized muffins.

Sunflower Seed Muffins: substitute 1 cup of ground sunflower seeds for ground sesame seeds, and 1/2 cup of whole sunflower seeds for sesame seeds.

Sesame Date Muffins: Add 1/2 cup of finely chopped dates to wet mixture, and reduce honey to 1/2 cup.
